Olive Oil Mayonnaise

Ingredients:
– 1 egg yolk
– 1 lemon
– 34 g black olives
– 14 cl olive oil
– 14 g strong mustard
– A pinch of fine salt
– A grind of black pepper

Preparation:
Juice the 1/2 lemon.
Whisk the egg yolk with salt, mustard, pepper, and lemon juice. While continuing to whisk, gradually add the olive oil until a thick mayonnaise forms.

Pit the olives, then blend them into a paste. Mix the olive paste into the mayonnaise.
